9 months agoAioli Potatoes with Beans and Anchovy Serves 4-6. This is great as a first course in lettuce leaves or with steak or roast chicken as a main. Aioli 2 egg yolks 250ml extra virgin olive oil 2 cloves garlic 1/4 teaspoon salt Put the yolks into a bowl and beat well but don’t let them get foamy. Add the oil drop by drop, beating continuously, until the mixture is thick and creamy. Add the remaining oil in a thin stream stirring continuously. (If it curdles, stop, put a new yolk in a bowl, add the oil drop by drop, beat until thick and creamy, add the curdled mixture a spoonful at a time until all absorbed). Peel the garlic and crush with the salt with the end of your knife until smooth. Add the garlic to the yolk mixture and mix well. Taste and season. Reserve. Potatoes and Beans 800g unpeeled, well-washed floury potatoes, I used Agrias 180g green beans, stalk ends cut off, beans halved 8 anchovy fillets, or more if desired 1/2 cup pitted Greek olives 2 tablespoons chopped parsley Cut the potatoes into 4cm chunks and steam or boil for 25 minutes or until tender. Add the beans and boil/steam 3 minutes. Remove from the heat and drain very well. Allow to steam dry for 5 minutes. Place the vegetables in a large salad bowl and add the aioli. Mix gently but well. 8 months agoRoasted Tomato, Spinach and Bread Salad. Serves 4-6. 3 x 3cm thick slices ciabatta loaf, ripped into bite sized pieces 9 tablespoons extra virgin olive oil 8 medium tomatoes 1 clove garlic, finely chopped 1 teaspoon sugar 2 tablespoons snipped thyme 1 small red onion 2 tablespoons balsamic vinegar 3 handfuls baby spinach leaves Preheat the oven to 200C° Line 2 ovenproof trays with baking paper . Put the bread, 3 tablespoons of the oil, salt and freshly ground black pepper into one of the trays and toss with your hands. Slice the tomatoes through their equators and pull the seeds and pulp out into a small bowl then pour into a strainer over another bowl and let drain well. Discard the seeds, reserve the juice. Put the tomato halves side by side on the other tray. Sprinkle, garlic, salt, pepper, the sugar and thyme over the tomatoes. Drizzle 3 tablespoons of the oil over the tomatoes. Place in the oven, with the tray of bread, for 15 minutes. Remove the tray of bread as it will be browned and crisp. Reserve. Turn the oven down to 150°C and cook the tomatoes a further 15 minutes or until they are slightly shrivelled. Remove from the oven and sprinkle each with a little balsamic. Reserve. Slice the onion thinly and add to the bowl of tomato juice. Season with salt and pepper and add the remaining 3 tablespoons of oil. This is the dressing Put the spinach, roasted bread and tomatoes on a serving platter then spoon the dressing over everything. Available in European oak and walnut with leather or linen woven seat options.
