3 months agoFilipino Sinigang, a sour Filipino soup A cozy, tangy hug in a bowl that brightens even the coldest of days. Its zesty, comforting flavours bring a taste of sunshine to the winter season, soothing both body and soul. This to me reminds me of my childhood and it is so easy to freshly make, many of the ready make sachets have fish as an ingredient so this is a great alternative. Remember it’s a sour soup, so you really want to to taste the tamarind but it balances out with all the other ingredients :) shout out to the lads 🍌 @bunchofbananaspod 1 packet of firm tofu, cubed (e.g. @cauldronfoods marinated tofu or puff tofu) 4-5 cloves garlic, finely minced 2 tomatoes, quartered 1 sweet onion, sliced 3 tbsn vegan fish sauce 1 tbsn cooking oil 2 cups vegetable broth 3 tablespoons tamarind paste 10 pieces long beans, trimmed and cut into 2-inch pieces 1 medium-sized Pak choi, leaves separated and washed 5-6 pieces okra, sliced 1 bag of spinach or kang-kong (water spinach), cleaned and trimmed 3 pieces chilli peppers (adjust according to spice preference) Instructions: 1. Heat oil in a large pot over medium heat. Add minced garlic and sliced sweet onion, sauté until fragrant and the onions turn translucent. 2. Add the cubed tofu to the pot and cook until it gets slightly browned on the edges. 3. In the same pot, add the quartered tomatoes. Sauté until the tomatoes begin to break down 4. Pour in the vegetable broth and bring it to a boil. Add tamarind paste and fish sauce. Stir well to combine the flavours. 5. Once boiling, add the long beans, okra, and chilli peppers to the pot. Let it simmer for about 5-7 minutes until the vegetables start to soften. 6. Add the Pak choi leaves and spinach (or kang-kong) to the pot. Stir gently to combine and simmer for an additional 2-3 minutes until the greens wilt slightly. 7. Taste the sinigang and adjust the seasoning if needed. You can add more tamarind paste for a more tangy flavour or soy sauce for depth. 8. Serve the vegan sinigang hot with steamed rice.
